Just tried this recipe today. It turned out great! This was my first attempt at risotto, and it did not disappoint. The risotto was super creamy. I used plant based sour cream instead of heavy cream. I think it left a little tartness in the disk. Still tasted great. I just made it and almost cried. Do you know if it freezes well?
